Madeleines au thé matcha et framboises




Une recette de madeleines est toujours une excellente idée ! Cette fois-ci, je la décline en ajoutant du thé vert matcha et des framboises. Ces madeleines délicieuses et moelleuses sont parfaites pour le goûter ! 

Ingrédients 

Pour environ une vingtaine de madeleines  

Farine T65              200 g 
Levure chimique          7 g 
Œufs                         3 
Sucre                     110 g 
Miel                       30 g 
Beurre clarifié       200 g 
Lait                       60 ml 
Thé vert matcha      10 g 

1. Tamisez la farine avec la levure chimique. 

2. Faites fondre le beurre sur feu doux. 

3. Mélangez les œufs, le sucre, le miel et le lait. 

4. Ajoutez le thé matcha. 

5. Incorporez le mélange farine-levure. 

6. Ajoutez le beurre fondu froid et mélangez. 

7. Réservez au frais la pâte toute la nuit. 

8. Préchauffez le four à 210˚ C. 

9. Posez le moule sur une grille et remplissez les alvéoles aux ¾. 

10. Enfournez et faites cuire pendant 5 minutes puis baissez le four à 160˚ C. 

11. Poursuivez la cuisson pendant 15 minutes en vérifiant la coloration. 

12. Démoulez et laissez refroidir sur une grille.

Makes 20 madeleines  

Ingredients  

All-purpose flour          200 g 

Baking powder               7 g 

Eggs                            3 

Sugar                        110 g 

Honey                        2 tablespoons 

Ghee                         200 g 

Milk                        60 ml 

Matcha tea                10 g 

Steps  

1. Sieve the flour with the baking powder. 

2. Place the eggs, sugar, honey, milk and the matcha tea in a bowl and whisk. 

3. Add the flour with the baking powder and mix well. 

4. Add the cooled melted ghee into the batter and mix. 

5. Chill up to overnight. 

6. The next day: place the madeleine moulds on a baking tray and pour the batter into the moulds (fill each mould three-quarters full). 

7. Preheat oven to 210˚ C and bake 5 minutes. Then lower the temperature to 160˚ C and bake about 15 minutes until golden brown. 

8. Remove from the mould and let cool on a rack.
